Step 1: Heat 1 tablespoon sesame oil in a large non-stick skillet over medium high.
Step 2: Add the broccoli and sliced mushrooms. Cook for around 6 minutes. Remove the broccoli mixture from the skillet. Do not wipe out the pan.
Step 3: Add the remaining 2 tablespoons sesame oil to the skillet. Add the rice and cashews and cook for 5 minutes.
Step 4: Stir in the eggs and cook for 1 minute. Stir in the broccoli mixture, 1 tablespoon soy sauce, and pepper.
Step 5: Combine the remaining 2 tablespoons soy sauce, peanut butter, vinegar, and 1 tablespoon water in a bowl. Top the rice mixture with the peanut butter mixture and top with sesame seeds. Stirring is an option and up to you!
