Ingredients

The ingredients are:
  • 3 tablespoons toasted sesame oil, divided
  • 3 cups broccoli florets
  • 8 oz shiitake mushrooms, sliced
  • 2 (8.8 ounces) packages of precooked brown rice
  • 1/2 cup unsalted, roasted cashews
  • 2 large eggs, lightly beaten
  • 3 tablespoons reduced-sodium soy sauce, divided
  • 1/4 teaspoon black pepper
  • 1/4 cup peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon water
  • 1 tablespoon toasted sesame seeds

How to Make

  • Step 1: Heat 1 tablespoon sesame oil in a large non-stick skillet over medium high.

  • Step 2: Add the broccoli and sliced mushrooms. Cook for around 6 minutes. Remove the broccoli mixture from the skillet. Do not wipe out the pan.

  • Step 3: Add the remaining 2 tablespoons sesame oil to the skillet. Add the rice and cashews and cook for 5 minutes.

  • Step 4: Stir in the eggs and cook for 1 minute. Stir in the broccoli mixture, 1 tablespoon soy sauce, and pepper.

  • Step 5: Combine the remaining 2 tablespoons soy sauce, peanut butter, vinegar, and 1 tablespoon water in a bowl. Top the rice mixture with the peanut butter mixture and top with sesame seeds. Stirring is an option and up to you!
