Step 1: In Dutch oven, place 6 chicken thighs and drumsticks.
Step 2: Lightly season.
Step 3: Add in your carrots, whole shallots and whole garlic, (they had 15 cloves), getting in between the chicken pieces.
Step 4: Add in orange slices, bay leaves and thyme sprigs.
Step 5: In a bowl, mix honey, fig jam, olive oil, soy sauce, Dijon mustard, citrus zest, lemon juice salt, and pepper .
Step 6: Pour over chicken and vegetables evenly.
Step 7: Cover pot and bake at 350 degrees F for an hour and a half.
Step 8: Uncover and bake at 375 degrees Fahrenheit for an additional 20 to 30 minutes until top is caramelized and sauce is thickened.
Step 9: Remove bay leaves and thyme
