Ingredients

The ingredients are:
  • 8 ounces sea scallops
  • 1 tablespoon butter
  • 1/8 teaspoon lemon pepper
  • 1/8 teaspoon salt
  • 1/16 teaspoon paprika
  • 4 ounces mandarin oranges, drained (1 cup)
  • 2 tablespoons craisins
  • 4 ounces goat cheese , crumbled
  • 2 tablespoons kalamata olives, sliced
  • 1 tablespoon red onion, minced
  • 16 ounces mixed salad greens

How to Make

  • Step 1: Cook the scallops in butter until browned lightly on both sides. These rascals were big.

  • Step 2: Season them lightly with salt, lemon pepper and paprika.

  • Step 3: Season the mixed greens.

  • Step 4: Divide into 4 bowls.

  • Step 5: On top of each: sprinkle cheese, (feta), olives, onions and craisins equally between the 4 bowls.

  • Step 6: Then put the the mandarin oranges over the top, use 2 containers so you get enough.

  • Step 7: Then divide the scallops on top equally. It looked like they had 3. Bet you get more. lol
