  • 3 tablespoons butter

  • 6 ounces semisweet chocolate chips (1 package)
  • 3 eggs
  • 2 tablespoons rum
  • 12 ounces whipping cream, (1 1/4 cups )
  • Topping
  • 2 ounces unsweetened chocolate bar, shaved
  • 2 ounces Reddi whip topping

How to Make

  • Step 1: Butter 7-inch pie plate.

  • Step 2: Pat in crumbled chocolate cookies mixed with butter.

  • Step 3: Bake the shell in a moderately hot oven (375 degrees F) for 3 minutes.

  • Step 4: For the filling:

  • Step 5: Melt semisweet chocolate over hot water.

  • Step 6: Beat in 1 whole egg and 2 egg yolks, one at a time.

  • Step 7: Add 2 tablespoons rum.

  • Step 8: Beat 2 egg whites (pasteurized egg beaters) stiff

  • Step 9: Temper the egg whites in.

  • Step 10: Whip the cream.

  • Step 11: Fold eggs into the slightly cooled chocolate mixture

  • Step 12: Fold in whipped cream.

  • Step 13: Spoon the mixture into the shell and chill well.

  • Step 14: Top with Reddi whip whipped cream and shavings of unsweetened chocolate.
