Step 9: Fold in the spinach into remaining egg whites.
Step 10: Pour over filling.
Step 11: Cook covered on low about 5 minutes on stovetop.
Step 12: And then pop in oven uncovered to finish cooking for about 10 minutes.
Step 13: Serve with salsa on the side.
