  • Pasta
  • 8 ounces dry fettuccine noodles
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 2 tablespoons butter
  • 16 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon turmeric
  • 4 ounces heavy cream
  • 2 ounces plain kefir
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 ounces parmesan cheese, grated
  • 2 ounces romano cheese,grated
  • 1/4 cup fresh parsley, chopped

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, because it will finish cooking in sauce, save 1/4 cup pasta water.

  • Step 2: When noodles are almost done start sauce.

  • Step 3: Sauce :

  • Step 4: Heat butter and oil.

  • Step 5: Add mushrooms and fry until soft.

  • Step 6: Add turmeric, pasta water and drained noodles.

  • Step 7: Cook for a couple of minutes.

  • Step 8: Add cream and kefir toss don't boil; when thick add seasoning to taste.

  • Step 9: Add cheeses

  • Step 10: Toss

  • Step 11: Cook a minute

  • Step 12: And parsley and toss like crazy.
