Ingredients

The ingredients are:
  • Pasta
  • 1 pound dry shell pasta
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 1 tablespoon olive oil
  • 1 shallot, sliced
  • 4 garlic cloves, finely chopped
  • 1 pound frozen peas
  • 1 cup vegetable stock
  • 1/4 teaspoon red chili flakes, to taste
  • 8 ounces parmesan cheese, grated (1 cup)
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons butter
  • 1/2 teaspoon salt, to taste
  • 1/4 teaspoon pepper, to taste

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente.

  • Step 2: Drain, saving 1/2 cup pasta water.

  • Step 3: Meanwhile in stockpot, heat oil.

  • Step 4: Add shallot, red chili flakes and garlic.

  • Step 5: Cook for 1 minute.

  • Step 6: Add peas and veggie broth.

  • Step 7: Bring to a simmer and cook for 5 minutes.

  • Step 8: Add the pasta and pasta water to the pan along with parmesan, parsley and butter.

  • Step 9: You can add meat here if using.

  • Step 10: Cook, continuously stirring, until cheese is melted and everything is well combined and saucy.

  • Step 11: Season with salt and pepper to taste.
