  • 1 pound baby carrots
  • Dressing
  • 1 clove garlic, crushed
  • 2 tablespoons olive oil
  • 1 teaspoon harissa spice mix
  • 1/2 teaspoon ground caraway seeds
  • 1/8 teaspoon ground cumin
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper, to taste
  • Garnish
  • 1/2 cup marinated kalamata olives, pitted
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Trim, peel and slice the carrots.

  • Step 2: Place in a pan and cover with water; bring to the boil and then reduce the heat to a simmer.

  • Step 3: Simmer for for about 10 minutes, or until tender.

  • Step 4: Combine all the remaining ingredients except the olives in a jar and shake to combine.

  • Step 5: Drain and rinse carrots.

  • Step 6: Place in a bowl and dress with the dressing in the jar.

  • Step 7: Sprinkle olives on top and serve at room temperature.

  • Step 8: Add parsley.
