Ingredients

The ingredients are:
  • 1 eggplant, peeled, sliced very thin
  • 3 eggs, beaten
  • 1/4 pound soda crackers, pounded to crumbs
  • 4 tablespoons oil

How to Make

  • Step 1: Get a sleeve of soda crackers and pound to fine crumbs and put in bowl.

  • Step 2: Get a plate and put several paper towels on it.

  • Step 3: Beat eggs in bowl.

  • Step 4: Peel the eggplant and cut very thin.

  • Step 5: Heat oil in skillet, you are probably going to need more it soaks it up like a sponge.

  • Step 6: Dip eggplant in eggs coating it thoroughly.

  • Step 7: Them dip in cracker crumbs.

  • Step 8: And place in very hot oil.

  • Step 9: Repeat adding more oil as needed, (you will need too) make sure the oil is hot before adding more eggplant.

  • Step 10: Flip when golden brown.

  • Step 11: When brown on both sides move to paper toweled plate.

  • Step 12: Repeat until done the last eggplant will have bigger pieces of soda crackers on them.
