Step 1: Preheat oven to 350 degrees F.
Step 2: Prepare an 8″ square baking pan with non-stick cooking spray.
Step 3: Mix the first 6 dry ingredients in a large bowl (or right in the baking pan).
Step 4: Make 3 depressions in dry ingredients – two small, one larger.
Step 5: Pour vinegar in one of the small depressions.
Step 6: Vanilla extract in the other small depression.
Step 7: The vegetable oil in the third larger depression.
Step 8: Add the mashed bananas mixed with lemon juice and pour water over top.
Step 9: Mix batter well until smooth.
Step 10: Bake on the middle rack of the oven for 35 minutes. Check the center of cake with a toothpick to make sure it comes out clean.
Step 11: Cool.
