  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Wet Ingredients
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon white vinegar
  • 5 tablespoons oil
  • 1/2 cup bananas, mashed, (overripe )
  • 1 teaspoon lemon juice for mashed bananas
  • 1 cup water

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Prepare an 8″ square baking pan with non-stick cooking spray.

  • Step 3: Mix the first 6 dry ingredients in a large bowl (or right in the baking pan).

  • Step 4: Make 3 depressions in dry ingredients – two small, one larger.

  • Step 5: Pour vinegar in one of the small depressions.

  • Step 6: Vanilla extract in the other small depression.

  • Step 7: The vegetable oil in the third larger depression.

  • Step 8: Add the mashed bananas mixed with lemon juice and pour water over top.

  • Step 9: Mix batter well until smooth.

  • Step 10: Bake on the middle rack of the oven for 35 minutes. Check the center of cake with a toothpick to make sure it comes out clean.

  • Step 11: Cool.

  • Step 12: Please note: baking times may vary depending on your oven.
