Step 1: Scald milk with bay leaf and cinnamon stick.
Step 2: In a bowl, thoroughly combine eggs with egg yolks, sugar, vanilla, nutmeg, and salt.
Step 3: Strain milk over egg mixture and pour into small glass dishes (ramekins) or a casserole.
Step 4: Bake these in a pan with water in it. (Bain Marie water bath)
Step 5: Test custard with knife.
Step 6: It is better to undercook then over cook, 40 to 50 minutes in 325 degree oven.
Step 7: Garnish with whipped cream and sprinkle nutmeg on it
