Ingredients

The ingredients are:
  • 4 cups onions, thinly sliced
  • 1 garlic clove, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 46 ounces tomato juice (1 can)
  • 2 cups beef broth
  • 2 tablespoons dry Lipton onion soup mix
  • 3 tablespoons lemon juice
  • 2 teaspoons dried parsley flakes
  • Bread
  • 6 ounces French bread, sliced, (6)
  • 4 ounces mozzarella cheese, shredded
  • 4 ounces Swiss cheese, shredded
  • Butter mix
  • 6 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon garlic salt

How to Make

  • Step 1: Mix butter mixture and set aside.

  • Step 2: In a large stock pot, saute onions in butter and oil until tender.

  • Step 3: Add garlic.

  • Step 4: Add the tomato juice, broth, Lipton onion soup mix, lemon juice and parsley.

  • Step 5: Bring to a boil.

  • Step 6: Reduce heat.

  • Step 7: Simmer, uncovered, for 40 minutes, stirring occasionally.

  • Step 8: Ladle soup into 10 ounce oven proof soup bowls.

  • Step 9: Top with garlic buttered French bread.

  • Step 10: Sprinkle with cheese mix.

  • Step 11: Broil 4-6 in. from the heat for 2-3 minutes or until cheese is bubbly and lightly browned.
