Step 1: Preheat your oven to 375°F (190°C).
Step 2: Arrange the baguette slices on a baking sheet. Brush each slice with a little olive oil. Place the baking sheet in the preheated oven and toast the bread slices for about 5-7 minutes, or until they are lightly golden and crisp. Remove from the oven and set aside.
Step 3: Wash the figs thoroughly under cold water. Trim off the stems and cut each fig into quarters.
Step 4: In a small bowl, whisk together the honey and balsamic vinegar until well combined, to make a drizzle for after the crostini is finished.
Step 5: Spread a generous layer of softened goat cheese onto each toasted baguette slice. Place 2-3 fig quarters on top of the goat cheese layer.
Step 6: Drizzle the honey-balsamic glaze over the figs and goat cheese. Lightly sprinkle the crostini with a pinch of salt and a grind of black pepper. If using, scatter a few chopped pistachios over the top.
Step 7: Garnish each crostini with fresh thyme leaves.
Step 8: Serve immediately. They taste best warm.
