  • 2 Earl Grey tea bags
  • For the Quick Bread Batter:
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup plain yogurt or buttermilk
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Optional Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1-2 teaspoons brewed Earl Grey tea (cooled)

How to Make

  • Step 1: Place the two Earl Grey tea bags in a heatproof bowl.

  • Step 2: Pour the boiling water over the tea bags.

  • Step 3: Allow the tea to steep for about 5-7 minutes, then remove the tea bags. Let the tea cool to room temperature.

  • Step 4: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch (23x13 cm) loaf pan.

  • Step 5: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

  • Step 6: In a separate bowl, lightly beat the eggs.

  • Step 7: Add the vegetable oil or melted butter, plain yogurt or buttermilk, lemon zest, and vanilla extract to the beaten eggs. Mix well.

  • Step 8: Gradually pour the wet mixture into the dry ingredients. Mix until just combined. Do not overmix; some lumps are okay.

  • Step 9: Gradually pour in the cooled Earl Grey tea infusion, folding it into the batter until evenly incorporated.

  • Step 10: Pour the batter into the prepared loaf pan and smooth the top.

  • Step 11: Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.

  • Step 12: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  • Step 13: For the glaze, in a bowl, whisk together powdered sugar, fresh lemon juice, and 1-2 teaspoons of brewed Earl Grey tea until you achieve a smooth glaze consistency.

  • Step 14: Once the bread is completely cooled, drizzle the glaze over the top.
