  • 6 eggs
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/16 teaspoon ground white pepper
  • 1 teaspoon sesame oil
  • Garnish
  • 1 1/2 tablespoons oil
  • 1 green onion, minced

How to Make

  • Step 1: Mix shrimp with salt, white pepper and cornstarch until well combined.

  • Step 2: Let set 10 minutes.

  • Step 3: In a bowl, beat eggs with whisk.

  • Step 4: Add water, salt, white pepper and sesame oil.

  • Step 5: Beat until it reaches an even, smooth consistency.

  • Step 6: Heat oil in a wok over medium heat.

  • Step 7: Fry shrimp on both sides in a single layer.

  • Step 8: As soon as it curls up and turns pink, turn off the heat.

  • Step 9: Transfer the shrimp into the egg mixture leaving the oil in the pan.

  • Step 10: Heat wok.

  • Step 11: Add egg mixture.

  • Step 12: Cook until still slightly wet.

  • Step 13: Add green onions.

  • Step 14: Season to taste.
