  • 1 clove garlic, crushed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper, to taste
  • 1/2 pound asparagus tips
  • 4 ounces feta cheese, crumbled
  • 1 cup fresh mint leaves, torn
  • 15 ounces whole beets, drained, cut in wedges (1 can)
  • 1/2 cup walnut halves, toasted

  • Step 1: Lemon Dressing:
