Step 1: Preheat the grill or BBQ .
Step 2: Also preheat your oven to 180°C.
Step 3: Place chicken, garlic, paprika, oil and salt in a large bowl, mix to combine. Set aside for 15 minutes to marinate
Step 4: Cook the chicken on BBQ or grill for 3 minutes on each side or until charred remove and place the chicken on a lined baking tray. Bake in the preheated oven for 20 minutes or until cooked through.
Step 5: Serve with Pearl Couscous Salad.
Step 6: "To make the couscous"; Heat oil in a large saucepan over medium heat. Cook onion until soft, add the pearl couscous, stirring for 3 minutes.
Step 7: Add the chicken stock and bring to the boil. Reduce the heat, simmer for 10-15 minutes or until the couscous is cooked; set aside, allow to cool.
Step 8: Add the cucumber, cherry tomatoes, shallots, lemon juice, olive oil, mint, parsley leaves and chives to the cooked couscous;
Step 9: Mixing well to combine all ingredients.
Step 10: Taste and adjust seasonings if needed.
