Ingredients

The ingredients are:
  • 600 grams chicken drumsticks (Lilydale Free Range Chicken Drumsticks was recommeded)
  • 2 garlic cloves, minced
  • 2 tablespoon's smoked paprika
  • 2 tablespoon's olive oil
  • 1/2 teaspoon salt
  • Pearl Couscous Salad Ingredients
  • 1 brown onion, diced
  • 1 1/2 cups pearl couscous
  • 2 1/2 cups chicken stock
  • 1 cucumber, diced
  • 250 gram punnet cherry tomatoes, quartered
  • 2 shallots, finely sliced
  • 2 tablespoons lemon juice
  • 2tablespoons olive oil
  • 1/2 cup flat leaf parsley, finely chopped
  • 1/2 cup Mint leaves, finely chopped
  • 1/4 cup chives, finely chopped
  • Salt and pepper to taste

How to Make

  • Step 1: Preheat the grill or BBQ .

  • Step 2: Also preheat your oven to 180°C.

  • Step 3: Place chicken, garlic, paprika, oil and salt in a large bowl, mix to combine. Set aside for 15 minutes to marinate

  • Step 4: Cook the chicken on BBQ or grill for 3 minutes on each side or until charred remove and place the chicken on a lined baking tray. Bake in the preheated oven for 20 minutes or until cooked through.

  • Step 5: Serve with Pearl Couscous Salad.

  • Step 6: "To make the couscous"; Heat oil in a large saucepan over medium heat. Cook onion until soft, add the pearl couscous, stirring for 3 minutes.

  • Step 7: Add the chicken stock and bring to the boil. Reduce the heat, simmer for 10-15 minutes or until the couscous is cooked; set aside, allow to cool.

  • Step 8: Add the cucumber, cherry tomatoes, shallots, lemon juice, olive oil, mint, parsley leaves and chives to the cooked couscous;

  • Step 9: Mixing well to combine all ingredients.

  • Step 10: Taste and adjust seasonings if needed.
