The ingredients are:
  • 4 cups baking mix
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 3 eggs
  • 21 ounces cherry pie filling (1 can)
  • Glaze
  • 1 cup powdered sugar, sifted
  • 2 tablespoons milk

How to Make

  • Step 1: Grease a jelly roll pan or 2 square cake pans.

  • Step 2: Mix all ingredients except pie filling and glaze.

  • Step 3: Beat vigorously 30 seconds.

  • Step 4: Spread 2/3 of the batter in jelly roll pan or 1/3 batter in square pan.

  • Step 5: Spread pie filling over batter (filling may not cover batter completely).

  • Step 6: Drop remaining batter by tablespoon onto pie filling.

  • Step 7: Bake until lightly brown 20-25 minute at 350 degrees.

  • Step 8: GLAZE:

  • Step 9: Beat 1 cup powdered sugar and 2 tablespoons milk until smooth and desired consistency.

  • Step 10: Drizzle over top cooled coffee cake.
