Step 1: Combine salad ingredients together in a large salad bowl and chill.

Step 3: Whisk together all of the dressing ingredients.
Step 4: Meatballs:
Step 5: Mix meatball ingredients and chill.
Step 6: In a shallow bowl with water, dip your hands in, shake off excess water and with wet hands, roll 1 tablespoon of meatball mixture into a ball.
Step 7: Repeat with remaining mixture to make 20 meatballs.
Step 8: Heat oil in a large nonstick frying pan over medium heat.
Step 9: Add the meatballs in batches without crowding the pan, and brown on all sides until golden and cooked through.
Step 10: After meatballs are done, mix dressing throughout the salad leaves.
Step 11: Serve with the chicken meatballs and garnish with the crushed peanuts.
