Step 1: In a small microwave-safe bowl, combine the softened butter and hot chili oil. Microwave for a few seconds until the butter is melted. Stir to combine the oil and butter.
Step 2: Heat a skillet or non-stick pan over medium-low heat.
Step 3: Brush one side of each slice of bread with the hot chili oil and melted butter mixture.
Step 4: Place one slice of bread, oil-side down, on the heated skillet or pan.
Step 5: Layer the cheese slices evenly on top of the bread in the pan.
Step 6: Place the other slice of bread, oil-side up, on top of the cheese.
Step 7: Cook the sandwich for about 3-4 minutes on each side, or until the bread turns golden brown and the cheese melts completely. Adjust the heat as needed to prevent the bread from burning.
Step 8: Once the cheese has melted and the bread is toasted to your liking, remove the grilled cheese sandwich from the pan.
Step 9: Let it cool for a moment, and then slice it diagonally or into halves, and serve it hot.
