  • 1 pound waxy red potatoes

  • 1/2 cup onion, diced
  • 1 clove garlic, smashed
  • 3 tablespoons flour
  • 5 cups chicken broth
  • 1 pound green beans, tailed and topped, cut into one inch pieces.
  • 1/2 teaspoon dried savory
  • 8 ounces smoked beef sausage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnish
  • 4 ounces sour cream

How to Make

  • Step 1: Peel the potatoes and cut into cubes.

  • Step 2: Dice the bacon and fry it in a stock pot over medium heat.

  • Step 3: Add onion and garlic.

  • Step 4: After a few minutes, add the flour to the rendered fat of the bacon and stir in with a stirring spoon to make a smooth roux.

  • Step 5: Now add the stock while stirring.

  • Step 6: Then add the diced potatoes and cook for 10 minutes over a medium heat.

  • Step 7: Add the finely chopped beans and savory and simmer everything together for another 20 minutes.

  • Step 8: Add whole sausage to the pot about 15 minutes before the end of the cooking time and cook them in the soup.

  • Step 9: Cut into slices and serve with the soup.

  • Step 10: Season the soup with salt and pepper to taste.

  • Step 11: And add a dash of cream or sour cream to taste before serving.
