Ingredients

The ingredients are:
  • 1 head romaine lettuce
  • 1/4 cup carrots, grated
  • 1 cup cherry tomatoes, cut in half
  • 1/3 cup walnut halves, toasted
  • 3 tablespoons sesame seeds, toasted
  • 8 ounces fresh mozzarella cheese, cubed small
  • Dressing
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly cracked black pepper, to taste

How to Make

  • Step 1: Dry toast walnuts and sesame seeds.

  • Step 2: Wash the lettuce leaves.

  • Step 3: Bunch them together and slice them in 1/2 inch ribbons and place in a shallow salad bowl.

  • Step 4: Scatter the grated carrot on top followed by the cheese, walnuts, sesame seeds and tomatoes.

  • Step 5: Mix the dressing ingredients in a small jar and shake well.

  • Step 6: Pour over the salad and serve immediately.

  • Step 7: Season to taste.
