Step 1: Process the garlic cloves through a garlic press and rub evenly over the steaks.
Step 2: Season the steaks with salt and pepper to taste; let sit for 15 minutes.
Step 3: Meanwhile fire up grill and bring to high heat. Make sure you light up all the burners, you want the BBQ pipping hot!
Step 4: Place the steaks on the pipping hot grill, close cover and cook for 3 minutes.
Step 5: Open cover, flip steaks, reduce heat to medium-low and cook for another 2 to 3 minutes for medium rare. Add a minute or 2 more for medium or medium well doneness.
Step 6: Remove steak from grill and allow to sit for a few minutes to allow the juices to flow through the steak.
Step 7: Serve with your favorite chimichurri sauce.
