Ingredients

The ingredients are:
  • 1 pound ground beef (beef mince) (500 grams)
  • 8 ounces bacon (250 grams)
  • 1 3/4 cups grated tasty cheese (200 grams)
  • 1/2 cup grated pecorino (50 grams)
  • 1 onion
  • 6 garlic cloves
  • 1/2 cup smokey barbecue sauce
  • 1/2 cup breadcrumbs fresh or dry
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon allspice
  • 1/4 teaspoon salt
  • Freshly ground pepper to taste
  • 4 sheets pre-rolled puff pastry thawed but chilled
  • 1 egg for egg wash
  • Poppy seeds

How to Make

  • Step 1: Preheat oven to 400°F/200ºC. Line two large baking trays with non-stick baking paper.

  • Filling

  • Step 2: Finely chopped the bacon, onion and garlic (you can place these ingredients in a food processor and pulse until it's all finely chopped).

  • Step 3: In a bowl combine all the ingredients except the puff pastry, extra egg and poppy seeds.

  • Shaping and Cooking Sausage Rolls

  • Step 4: In a small bowl lightly beat the extra egg for an egg wash.

  • Step 5: Lay a sheet of pastry on a work surface.

  • Step 6: Cut sheet in half horizontally. Spread 1/8 of the meat mixture down the long side of one pastry half.

  • Step 7: With clean hands, shape into sausage. Brush opposite long edge with a little egg wash.

  • Step 8: Roll the pastry around the mince mixture to form a long sausage.

  • Step 9: Brush with egg wash and sprinkle with poppy seeds.

  • Step 10: Cut into 6 even pieces and arrange on prepared baking tray to allow enough room to puff.

  • Step 11: Repeat with the second pastry half.

  • Step 12: Then repeat with the other 3 sheets of puff pastry using up all the meat mixture.

  • Step 13: Bake in preheated oven for 30 minutes or until the pastry is puffed and golden brown and the filling is cooked through.

  • Step 14: Serve with your choice of dipping sauce.
