Ingredients

The ingredients are:
  • 2 ounces salt pork chopped, (1/4 cup)
  • 2 cloves garlic, minced
  • 1 cup onion, chopped
  • 7 cups water
  • 7 teaspoons chicken bouillon, (cubes )
  • 1 tablespoon dried parsley
  • 1 cup celery, chopped
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1 cup carrots, sliced
  • 1 cup zucchini, sliced
  • 15 ounces Italian green beans, undrained (1 can)
  • 15 ounces pinto beans, undrained (1 can)
  • 15 ounces stewed tomatoes (1 can)
  • 4 ounces small dried shell macaroni, (3/4 cup)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Garnish
  • 2 ounces parmesan cheese, grated

How to Make

  • Step 1: In large kettle cook chopped salt pork until rendered.

  • Step 2: Add garlic and onion and saute until tender.

  • Step 3: Add water, bouillon cubes, parsley, celery, basil, oregano, carrots, green beans & pinto beans with liquid and undrained tomatoes.

  • Step 4: Bring to a boil, reduce heat and simmer 1 hour.

  • Step 5: Add macaroni and zucchini.

  • Step 6: Cook 30 minutes or until macaroni is tender.

  • Step 7: Season to taste.

  • Step 8: Serve with grated Parmesan cheese.
