Step 1: In a dish or pie pan whisk together the first 4 ingredients (lime juice -pepper) and then add the onions and let stand at room temperature for 30 minutes.
Step 2: On a serving platter arrange the tomato slices and then top them with the marinated onions, cilantro and olive oil. Let stand for 15-30 minutes before serving.
Step 3: Sprinkle with additional pepper and add the lime slices to the platter if desired.
