Step 1: Whisk egg in a medium size bowl. Add milk, vinegar, oil, bran cereal and fruit.
Step 2: Mix dry ingredients in another bowl. Add dry ingredients to wet, mixing just to incorporate dry ingredients.
Step 3: Spoon into 12 regular sized muffin cups (I use the paper liners - grease pan if not using the liners). Bake at 375ºF for 18-20 minutes.
