Ingredients

The ingredients are:
  • 1 large egg
  • 1 1/4 cups milk
  • 1 tablespoon vinegar
  • 1/3 cup oil (vegetable oil)
  • 1 1/2 cups bran cereal (All-bran type)
  • 3/4 cup raisins (or Craisins)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Whisk egg in a medium size bowl. Add milk, vinegar, oil, bran cereal and fruit.

  • Step 2: Mix dry ingredients in another bowl. Add dry ingredients to wet, mixing just to incorporate dry ingredients.

  • Step 3: Spoon into 12 regular sized muffin cups (I use the paper liners - grease pan if not using the liners). Bake at 375ºF for 18-20 minutes.
