Step 1: In a bowl add the beats with 1/4 cup of the vinaigrette. Toss.
Step 2: In a small bowl toss the walnuts with 1/4 cup vinaigrette.
Step 3: Marinate both for up to 30 minutes.
Step 4: In a large bowl add the arugula with the beets and walnuts and apple slivers (if desired). You can always drizzle a bit more vinaigrette if desired.
Step 5: Arrange on salad plates and top what crumbled cheese and with herbs if desired.
