Ingredients

The ingredients are:
  • 4 beets, cooked
  • 2/3 cup walnut vinaigrette
  • 1/2 cup walnuts, toasted
  • 2 bunches arugula
  • 1 apple, sliced into slivers, optional
  • 1/2 cup goat cheese, crumbled
  • 2 tablespoons sliced herbs (mint, dill or parsley), optional

How to Make

  • Step 1: In a bowl add the beats with 1/4 cup of the vinaigrette. Toss.

  • Step 2: In a small bowl toss the walnuts with 1/4 cup vinaigrette.

  • Step 3: Marinate both for up to 30 minutes.

  • Step 4: In a large bowl add the arugula with the beets and walnuts and apple slivers (if desired). You can always drizzle a bit more vinaigrette if desired.

  • Step 5: Arrange on salad plates and top what crumbled cheese and with herbs if desired.
