Ingredients

The ingredients are:
  • 4 cups baby spinach leaves
  • 1 sweet onion, sliced into thin rings
  • 15 lychees (original recipe said 25 but I only used 15)
  • 1 teaspoon lemon juice (original recipe said to use lime juice)
  • 1 ounce, candied ginger, chopped
  • 3 tablespoons olive oil
  • 1 mango, peeled and pitted (use half for salad and half for dressing)
  • 1/3 cup cashews, optional (toasted)

How to Make

  • Step 1: In a large salad bowl or platter toss the spinach and onion together.

  • Step 2: Place 4 or 5 lychees in center. Toss.

  • Step 3: Arrange mango slices over spinach.

  • Step 4: Sprinkle with cashews, if using.

  • Step 5: In blender add the peeled and pitted lychees, remaining mango, peeled and pitted lychees, lime or lemon juice, olive oil, ginger and salt. Blend until smooth.

  • Step 6: Pour dressing over salad. You can store remaining dressing in refrigerator.
