Step 1: In a large salad bowl or platter toss the spinach and onion together.
Step 2: Place 4 or 5 lychees in center. Toss.
Step 3: Arrange mango slices over spinach.
Step 4: Sprinkle with cashews, if using.
Step 5: In blender add the peeled and pitted lychees, remaining mango, peeled and pitted lychees, lime or lemon juice, olive oil, ginger and salt. Blend until smooth.
Step 6: Pour dressing over salad. You can store remaining dressing in refrigerator.
