The ingredients are:
  • 3 eggs , beaten
  • 1/8 teaspoon salt
  • 1 tablespoon fresh chives, minced
  • 1 teaspoon water
  • 1 tablespoon butter
  • Filling
  • 2 ounces bacon, (2 strips)
  • 1/4 cup avocado pitted, sliced
  • 4 ounces Monterey jack cheese, shredded (1/2 cup)
  • 1/4 cup tomatoes, diced
  • 1 tablespoon black olives, sliced
  • 1/4 ounce sour cream (1 tablespoon)
  • 1/4 teaspoon fresh cracked black pepper
  • 1 green onion, minced

How to Make

  • Step 1: Cook bacon until crisp.

  • Step 2: In another skillet, heat butter.

  • Step 3: Beat eggs, water, chives and salt to taste.

  • Step 4: Add to butter.

  • Step 5: Cook until almost set and add cheese to half, saving some for top.

  • Step 6: Add tomato and avocado to half on top of cheese.

  • Step 7: Crumble bacon and sprinkle on top of cheese.

  • Step 8: Flip lid over and put cheese on top.

  • Step 9: Sprinkle on pepper.

  • Step 10: Cover until cheese melts.

  • Step 11: Add sour cream and green onion to top.
