Step 1: In a saucepan, heat the milk over medium-low heat until warm but not boiling. Stir occasionally to prevent scorching.
Step 2: In a separate bowl, whisk together the cocoa powder, sugar, and salt.
Step 3: Gradually add the dry mixture to the warm milk, whisking constantly until everything is well combined and there are no lumps.
Step 4: Continue to heat the mixture over medium-low heat, stirring occasionally, until it reaches your desired hot chocolate temperature. Be careful not to let it boil.
Step 5: Remove the saucepan from heat and stir in the vanilla extract.
Step 6: Pour the hot chocolate into mugs.
Step 7: Top each mug with a generous amount of mini marshmallows.
Step 8: Use a kitchen torch or place the mugs under a broiler to lightly toast the marshmallows until golden brown. (This is optional, but super yummy. Mugs will be HOT if you use the broiler, so beware.)
Step 9: Sprinkle crushed graham crackers over the marshmallows/toasted marshmallows.
Step 10: Drizzle some chocolate syrup or sprinkle chocolate shavings on top for extra indulgence.
