Ingredients

The ingredients are:
  • 5 small bananas, mashed
  • 1 1/2 cups Bob's Red Mill gluten free 1 to 1 baking flour
  • 3/4 cup coconut sugar
  • 3/4 cup mayonnaise (do not use miracle whip, this will not work)
  • 1 1/2 teaspoons baking soda
  • 1/2 cup chopped walnuts (Optional)

How to Make

  • Step 1: Mix all the ingredients together in a large bowl until well blended.

  • Step 2: Line a 12 hole muffin tin with paper muffin cup liners and fill them with the batter, to about a couple of millimeters from the top.

  • Step 3: Place in a preheated 350 degree Fahrenheit oven and bake for 25 to 30 minutes, or until a toothpick comes out dry after being inserted in the center of the muffin.

  • Step 4: Allow the muffins to cool before serving.
