  • 16 ounces smoked sausage links, halved lengthwise and cut into 1/2- inch pieces (1 package)
  • 1 cup onion, diced
  • 2 cloves garlic, smashed
  • 30 ounces black eyed peas,(2 cans, 15 ounces each)
  • 14 ounces tomatoes (1 can)
  • 7 ounces tomato sauce (1 can)
  • 1 cup beef broth
  • 1/4 teaspoon Cajun seasoning
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon hot pepper sauce
  • 1 1/2 cups frozen corn

How to Make

  • Step 1: Mix all spices together.

  • Step 2: In a large skillet heat oil.

  • Step 3: Cook sausage and onion over medium heat until meat is lightly browned.

  • Step 4: Add garlic and stir for one minute.

  • Step 5: Drain excess oil.

  • Step 6: Add spices seasoning to taste.

  • Step 7: Stir in the black eyed peas, tomatoes, tomato sauce, and hot pepper sauce.

  • Step 8: Cook for 15 minutes .

  • Step 9: Stir in the corn.

  • Step 10: Simmer 15 minutes longer .
