Ingredients

The ingredients are:
  • 1/4 cup white wine
  • 4 medium leeks, cleaned, white part only cut into 1 inch sections
  • 1 pound baby spinach, washed, drained well
  • 1 teaspoon fresh tarragon or 1/2 teaspoon dried
  • Salt and pepper to taste
  • 2 tablespoons fresh lemon juice

How to Make

  • Step 1: In a large skillet or wok over medium heat pour in the wine, add prepared leeks, stir fry until the wine has evaporated about 12 minutes

  • Step 2: Add spinach and tarragon, mix with the leeks, cook only long enough until the spinach has wilted and is heated right through about 3 minutes

  • Step 3: Season with salt and pepper, sprinkle on the lemon juice and serve
