Step 1: In a large skillet or wok over medium heat pour in the wine, add prepared leeks, stir fry until the wine has evaporated about 12 minutes
Step 2: Add spinach and tarragon, mix with the leeks, cook only long enough until the spinach has wilted and is heated right through about 3 minutes
Step 3: Season with salt and pepper, sprinkle on the lemon juice and serve
