Step 5: Add mushrooms and shallots.
Step 6: Cook until softened.

Step 8: In egg pan add filling to one side.
Step 9: Add cheeses.
Step 10: Add tomato, feel free to add more.
Step 11: Flip lid over and cover cook on low until cheese melts.
Step 12: When plating add dots of sour cream.
Step 13: Add avocado slices on top of sour cream.
