Ingredients

The ingredients are:
  • Base Ingredients
  • 1/2 cup self-raising flour
  • 1/2 cup desiccated coconut
  • 1/4 cup caster sugar
  • 60 grams butter, melted
  • Topping Ingredients
  • 2 eggs
  • 1/2 teaspoon vanilla essence
  • 1 cup desiccated coconut
  • 90g walnuts, roughly chopped into pieces
  • 1 1/2 cups brown sugar, lightly packed 1/2 teaspoon baking powder

How to Make

  • Step 1: Sift the flour into a bowl, then and add the sugar and coconut & mix well to combine.

  • Step 2: Add the melted butter to the dry ingredients & mix well.

  • Step 3: Press the mixture into a greased tin (approx. 28cm x 18cm). Bake at 180C for 15 minutes.

  • Step 4: Add vanilla to the eggs and lightly beat; add the coconut, chopped walnuts, brown sugar and baking powder & mix well.

  • Step 5: Spread the mixture over the partly-cooked base and return to oven for a further 25-30 minutes, or until the topping is cooked.

  • Step 6: Cool in the tin, and cut into squares.
