Ingredients

The ingredients are:
  • 5 ounces fresh squeezed orange juice
  • 2 teaspoons orange zest
  • 2 tablespoons chinese cooking wine (shaoxing)
  • 2 tablespoons rice vinegar, use cider if you cant find it
  • 4 table spoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili oil (optional)
  • 1 tablespoon cornstarch
  • Chicken
  • 2-3 tablespoons oil
  • 1 1/2 pounds chicken thighs, skinless and boneless cut into small cubes
  • 3 tablespoons cornstarch
  • 3/4 teaspoons salt
  • Aromatics
  • 2 teaspoons neutral oil divided, as needed
  • 2 teaspoons finely grated ginger
  • 4 cloves garlic minced
  • 2-3 birds eye chilis, minced
  • 2 scallions minced

How to Make

  • Step 1: Prepare the sauce. Put all ingredients into a bowl and whisk until cornstarch has no lumps

  • Prepare the chicken

  • Step 2: Heat a skillet or wok over medium heat , put in oil and allow it to heat

  • Step 3: Put the diced chicken into a bowl and season it. Sprinkle the chicken with cornstarch and use a spatula to coat

  • Step 4: Turn the heat up to medium high. Arrange chicken into an even layer and dont crowd. Cook on each side 4-6 minutes, flip and do the other side. Keep cooking in batches transfer to a bowl and set aside

  • Aromatics

  • Step 5: Heat the remaining oil and add aromatic ingredients. Cook for one minute.

  • Sauce

  • Step 6: Put all sauce ingredients into the skillet. Bring to a boil

  • Step 7: Reduce heat to medium low and cook continuously stirring for 3-5 minutes until thick.

  • Step 8: Put cooked chicken into sauce and stir to coat.cook over low heat 2-3 minutes
