Step 1: Prepare the sauce. Put all ingredients into a bowl and whisk until cornstarch has no lumps
Step 2: Heat a skillet or wok over medium heat , put in oil and allow it to heat
Step 3: Put the diced chicken into a bowl and season it. Sprinkle the chicken with cornstarch and use a spatula to coat
Step 4: Turn the heat up to medium high. Arrange chicken into an even layer and dont crowd. Cook on each side 4-6 minutes, flip and do the other side. Keep cooking in batches transfer to a bowl and set aside
Step 5: Heat the remaining oil and add aromatic ingredients. Cook for one minute.
Step 6: Put all sauce ingredients into the skillet. Bring to a boil
Step 7: Reduce heat to medium low and cook continuously stirring for 3-5 minutes until thick.
Step 8: Put cooked chicken into sauce and stir to coat.cook over low heat 2-3 minutes
