Ingredients

The ingredients are:
  • 8 ounces frozen breakfast sausage patties
  • 4 ounces white American cheese, (4 slices)
  • 8 eggs
  • 1 tablespoon bacon bits
  • 2 tablespoon onions, minced
  • 3 tablespoons fresh baby spinach
  • 1 tablespoon butter
  • 2 ounces heavy cream, (2 tablespoons)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, to taste

How to Make

  • Step 1: Heat butter and caramelize onions.

  • Step 2: In blender, combine eggs, spinach and bacon bits, season to taste.

  • Step 3: Add onions and cream whirl around until spinach is just flecks.

  • Step 4: Meanwhile heat sausage.

  • Step 5: Place wide mason jar lids (or egg rings sprayed like crazy) into a pan (however many will fit), and spray like crazy with nonstick cooking spray.

  • Step 6: Fill the space between the lids with about half a cup of water and turn heat to medium high.

  • Step 7: When the water in the pan starts to steam and lightly simmer, add eggs to the lids, distributing evenly.

  • Step 8: Cover the pan and set a timer for three minutes.

  • Step 9: Eggs are done when there’s no visible liquid or undercooked egg in the rings.

  • Step 10: Remove them using either tongs or a towel and set aside (eggs should release easily if the lids were greased).

  • Step 11: Assemble sandwiches, starting with an egg, then a sausage patty, cheese, and the other egg.
