Step 1: In a large bowl, combine all of the meatball ingredients EXCEPT the olive oil. Form the mixture into meatballs about 1 1/2 inches in diameter.
Step 2: Heat the olive oil in a large skillet. Add the meatballs and cook until browned on all sides. Remove from pan to a plate. Set aside.
Step 3: Heat the olive oil over medium heat. Crush the coriander seeds. Add the cumin, coriander, garlic and onion to the pan. Saute until onion is translucent and taking on a golden color. This will take about 5 minutes.
Step 4: Add the tomatoes and stir to combine. Add the cinnamon. Season to taste with kosher salt and pepper. Bring to a simmer.
Step 5: Return the meatballs to the pan. Turn to coat all sides with the sauce. Cover and simmer until the meatballs are cooked through - about 5 minutes.
Step 6: Serve over rice or lentils. Sprinkle with chopped fresh parsley, if desired.
