Step 1: In a large soup pot, add the chicken, water, onion and spices.
Step 2: Bring to a boil.
Step 3: Simmer 90 minutes.
Step 4: Remove chicken, debone, remove skin and chop.
Step 5: Remove floating spices (clove, pods, bay leaf and cinnamon stick)
Step 6: Add chicken and rice back in.
Step 7: Cover simmer 30 minutes more.
Step 8: Stir in garnish right before serving.
Step 9: Season to taste.
