Ingredients

The ingredients are:
  • 3 pounds whole chicken
  • 8 cups water
  • 1/4 teaspoon turmeric
  • 1 bay leaf
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 clove
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup onion, chopped
  • 7 ounces dry white rice
  • Garnish:
  • 2 green onions, minced
  • 2 ounces fresh baby spinach

How to Make

  • Step 1: In a large soup pot, add the chicken, water, onion and spices.

  • Step 2: Bring to a boil.

  • Step 3: Simmer 90 minutes.

  • Step 4: Remove chicken, debone, remove skin and chop.

  • Step 5: Remove floating spices (clove, pods, bay leaf and cinnamon stick)

  • Step 6: Add chicken and rice back in.

  • Step 7: Cover simmer 30 minutes more.

  • Step 8: Stir in garnish right before serving.

  • Step 9: Season to taste.
