The ingredients are:
  • 8 ounces dry rigatoni
  • 6 cups water
  • 1 teaspoon salt
  • Zucchini
  • 2 zucchini, diced
  • 1 cup onion, diced
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • Ham
  • 8 ounces ham, diced
  • 1 tablespoon olive oil
  • 1/4 teaspoon cracked black pepper
  • Topping
  • 2 ounces fresh mozzarella, shredded
  • 2 ounces cottage cheese
  • 1 green onion, minced

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente.

  • Step 2: Drain saving 1/2 cup water

  • Step 3: Meanwhile fry the zucchini and onion in heated olive oil until lightly browned.

  • Step 4: Add chicken broth and simmer.

  • Step 5: Use immersion blender to make sauce of zucchini.

  • Step 6: Add pasta and pasta water to simmer pasta.

  • Step 7: Meanwhile brown ham lightly in olive oil

  • Step 8: You could use this pan for zucchini just remove ham before cooking zucchini just keeping ham warm

  • Step 9: Mix cottage cheese and mozzarella.

  • Step 10: To plate:

  • Step 11: Put pasta and zucchini sauce in large bowl.

  • Step 12: Put ham on top.

  • Step 13: Season to taste with black pepper.

  • Step 14: Then dollop cheeses on top of ham.

  • Step 15: Sprinkle with green onions.
