  • 1 lemon juiced
  • 1 teaspoon vanilla
  • Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

How to Make

  • Step 1: Preheat oven to 375 degrees line a muffin tin with paper liners

  • Step 2: In a medium bowl combine sugar and zest, rub together until well integrated,

  • Step 3: Add rest of ingredients and whisk together

  • Step 4: In a large bowl combine all wet ingredients together

  • Step 5: Mix. let stand 2 minutes

  • Step 6: Divide batter into the 12 muffin tins

  • Step 7: Bake at 375 until toothpick comes out cleanly about 20 minutes

  • Step 8: Lemon Glaze

  • Step 9: Mix powdered sugar with lemon juice until smooth and thick
