Ingredients

The ingredients are:
  • 4 cups baby sweet peppers (or sub 2 red or other colored peppers sliced)
  • 1/2 cup olive oil
  • 3 garlic cloves, crushed
  • 1 teaspoon lemon rind, grated
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 3 ounces baby mozzarella balls, fresh
  • 1/2 cup basil leaves
  • 1 teaspoon lemon juice

How to Make

  • Step 1: Preheat broiler to high.

  • Step 2: On a foil-lined rimmed baking sheet arrange peppers and then broil for 3-5 minutes on each side or until blackened and tender. Let cool.

  • Step 3: In a bowl combine the peppers with the next 6 ingredients (-mozzarella); toss.

  • Step 4: Cover and refrigerate overnight.

  • Step 5: Let stand at room temp for 30 minutes and then stir in the basil and lemon juice.
