Step 1: Marinate chicken in salt, black pepper to taste, add sliced onion rings over night in a covered bowl.
Step 2: Next day
Step 3: Cut potatoes, onions, celery and pepper in slices.
Step 4: Place veggie slices in a 9x13 Pam sprayed casserole or a deep cookie sheet .
Step 5: Place marinated chicken on top.
Step 6: Mix chopped tomatoes, tomato paste, minced garlic, salt, black pepper, paprika, chicken broth and Chile pepper flakes (if you're using) to taste.
Step 7: Pour sauce on veggies and chicken in tray.
Step 8: Then cover with foil and put in pre-heated 425 degrees F oven for 45 minutes.
Step 9: Uncover and let brown 15 more minutes.
