Step 1: Boil the potatoes until soft in boiling salted water
Step 2: Meanwhile
Step 3: Saute onion and leek in butter until softened but not brown,can use some of the light green soft leek
Step 4: Add garlic
Step 5: Add the stock and cook down while potatoes are cooking so that it's reduced by at least 1/2 you don't want watery potatoes
Step 6: More is better your adding cream and want the veggies really soft
Step 7: Drain potatoes
Step 8: Mash adding the veggie mixture
Step 9: Beat
Step 10: Season to taste
Step 11: Add enough cream to make smooth not watery mixture
