  • 2 tablespoons butter
  • 1/4 cup onions, diced
  • 1 leek, sliced, white part only
  • 1 clove garlic, smashed
  • 1 cup vegetable stock
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon white pepper
  • 2 ounces light cream

How to Make

  • Step 1: Boil the potatoes until soft in boiling salted water

  • Step 2: Meanwhile

  • Step 3: Saute onion and leek in butter until softened but not brown,can use some of the light green soft leek

  • Step 4: Add garlic

  • Step 5: Add the stock and cook down while potatoes are cooking so that it's reduced by at least 1/2 you don't want watery potatoes

  • Step 6: More is better your adding cream and want the veggies really soft

  • Step 7: Drain potatoes

  • Step 8: Mash adding the veggie mixture

  • Step 9: Beat

  • Step 10: Season to taste

  • Step 11: Add enough cream to make smooth not watery mixture
