Ingredients

The ingredients are:
  • 1 tablespoon coconut oil
  • 1 cup steel cut oats
  • 5 cups water
  • 1/2 cup pitted prunes, chopped
  • 1/2 cup pitted dates, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

How to Make

  • Step 1: Spray slow cooker with non-stick spray, then grease with the coconut oil.

  • Step 2: Combine oats, prunes, dates, cinnamon, ginger, and salt

  • Step 3: Add water and stir well, breaking up sticky fruit with your fingers, if needed.

  • Step 4: Cover and cook on low until oats are tender and mixture is thick, approximately 8 hours. (You can add water if it seems the oatmeal is getting too thick during cooking.)

  • Step 5: Once the oatmeal is cooked through, uncover the slow cooker and stir well. (Oatmeal will thicken more as it cools.)
