Step 1: Spray slow cooker with non-stick spray, then grease with the coconut oil.
Step 2: Combine oats, prunes, dates, cinnamon, ginger, and salt
Step 3: Add water and stir well, breaking up sticky fruit with your fingers, if needed.
Step 4: Cover and cook on low until oats are tender and mixture is thick, approximately 8 hours. (You can add water if it seems the oatmeal is getting too thick during cooking.)
Step 5: Once the oatmeal is cooked through, uncover the slow cooker and stir well. (Oatmeal will thicken more as it cools.)
