Ingredients

The ingredients are:
  • 8 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced
  • 8 ounces white mushrooms, sliced
  • 1/2 cup pepperoni, cut into strips
  • 4 ounces mozzarella cheese, cut into 1/4-inch cubes
  • 1/4 cup jarred pizza or marinara sauce

How to Make

  • Step 1: Set oven rack about 6 inches from broiler; preheat broiler.

  • Step 2: In medium bowl, beat eggs, salt and pepper until well combined. Set aside.

  • Step 3: In 10-inch ovenproof skillet, heat oil over medium-high heat. Add bell pepper and mushrooms; cook, stirring often, until mushrooms give up most of their liquid, 5-7 minutes. Stir in pepperoni, then add beaten eggs. Tilt pan to evenly distribute, then scatter cheese over-top.

  • Step 4: Reduce heat to medium. As eggs on bottom set, periodically slide heatproof spatula under and lift up so raw eggs flow underneath. When eggs are about halfway cooked, spoon pizza or marinara sauce over-top.

  • Step 5: Broil until top is set and beginning to brown, 3-7 minutes, and eggs reach a safe internal temperature of 160°F. Let sit 5 minutes before serving. Garnish with basil, if desired. Refrigerate any leftovers.
