Ingredients

The ingredients are:
  • 1/2-3/4 pound smoked sausage, sliced (Kielbasa or similar)
  • 1 tablespoon olive oil, divided
  • 1 cup mashed potatoes (approximately)
  • 1 cup onion coarsely chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • Garlic or regular salt and pepper, to taste
  • Hot sauce, if desired for individuals to add

How to Make

  • Step 1: Add 1/2 tablespoons of oil to a skillet over medium high heat. Brown sausage on both cut sides. Set aside.

  • Step 2: Add remaining oil to skillet over medium heat. Add sliced peppers and onions and stir occasionally until lightly browned, about 7 – 9 minutes. Sprinkle with garlic salt and pepper, if desired.

  • Step 3: Push peppers to side of skillet. Add sausage to the other side of skillet.Place left over mashed potatoes in the center of skillet and flatten out with back of spoon.

  • Step 4: Cook on medium low heat until everything is warmed. Adjust seasonings and serve.
