Step 1: Preheat oven to 425 degrees Fahrenheit.
Step 2: Pam spray a 9x13 casserole.
Step 3: Put vegetables in casserole dish.
Step 4: Season lightly to taste.
Step 5: Rub oil all over pork season to taste.
Step 6: Place pork on top of vegetables.
Step 7: Add chicken stock.
Step 8: Bake 25 minutes.
Step 9: Cover and bake longer at 350 degrees Fahrenheit.
Step 10: Bake another 60 minutes adding water as needed, until pork is tender.
Step 11: Meanwhile, last 30 minutes, cook apples covered with lemon juice and apple juice unti juice is cooked out.
Step 12: Roughly chop.
Step 13: Test if you like mustard with apple juice and pork before you add it , you might want to serve mustard on the side.
Step 14: When juices have cooked down add butter and season to taste.
Step 15: Let meat rest tented 10 minutes before slicing.
Step 16: Serve applesauce on side or on top of sliced pork.
