  • 4 tablespoons butter
  • 4 stalks celery ,thinly sliced
  • 1 pound russet potato, peeled, cubed
  • 1 cup onion, diced
  • 2 cups vegetable stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/16 teaspoon nutmeg
  • 1 teaspoon dry parsley
  • 1 bay leaf
  • 1 cup milk
  • 4 ounces heavy cream,(1/2 cup)

How to Make

  • Step 1: Heat butter and saute onions and celery until translucent

  • Step 2: Add potatoes

  • Step 3: Saute until soft not brown

  • Step 4: Add stock and seasoning and bay leaf

  • Step 5: Simmer 20 minutes

  • Step 6: Fish out Bay leaf

  • Step 7: Mash potatoes to thicken soup add milk and cream heat but don't boil

  • Step 8: Season to taste
